How long do you keep a car when doing PPF ?

As long as we can, but usually just long enough to make sure all edges seal, anywhere from 1 hr to 30 min after all installation completed, baring in mind the dry air out here speeds up cure times... it really depends on your film and slip solution more than anything else. Avery tacks pretty good and stretches easier than some other films may require more attention to ensure the edges are all tacked. Your best bet to test out a few different scenarios and see what works best for you.
