starting out i did the same, multiple sizes. i found im most efficient with this setup. 12" rolls of 5% for strips. all hand cut. then 24" rolls for doors, and 36" rolls for backglasses. this will do everything i need. the middle and right rollers of my plotter are for 24", then flip tension of middle roller up and the two outsides do the 36". this way i never have to move the rollers. keeping up inventory with 20" and 24" was a headache. this saves time and money imo or maybe im ocd lol. as far as scraps, they get chunked. theres a method to everyones madness.
