I hate it happened to you, especially a brand new 911.  Anytime anyone cuts on a car there's a chance.  Just like everything, some are much better trimming/cutting PPF than others.

 

What's most interesting about this post to me is what in the world do you do for a living to score a 2017 911 at 23?

Well they lied to you we have never cut on the car in 14 years with most software now you can set to wrap edges.

A good installer doesn't need to do this and even where hand cutting may be needed you can do it off the car before going near paint.

Even if they really had no choice you can slip something behind the film to protect the paint.
