Tempered glass only around here. Plate glass if effing dangerous.

You might be able to find an old sliding glass door for free somewhere. I find a few every year getting tossed out.

I like to keep a board a little wider than the film roll. My main glass that I cut patterns from is 45x78 (sliding glass door minus the frame).  I like to mount the main board vertical. Glass on the other side can be whatever fits your space.

I used to use a rolling frame but it's a pain to keep moving around. Always worried about it falling or breaking while moving it.

How big should I go?Does 30 x68 work?

Yes. I've worked off of smaller or sometimes no glass at all in some mobile situations.

Get it cleaned up with some soap/water, razor blades and #3 steel wool. Drill a few holes in the frame and attach it to the wall you plan to work from. Be sure to use a heavy lag bolt and pre drill a hole into a stud in the wall so it doesn't fall and hurt someone or the vehicle you're working on.
